General Chili Cook-off Rules 

Cooking equipment: Contestants are responsible for their own cooking utensils & cookers. Tasting cups and spoons will be provided • Hygiene: Participants must follow all local health guidelines. This includes wearing gloves when handling food Chili ingredient rules • No barbecue sauce: Barbecue sauce is strictly forbidden. This rule emphasizes the distinction between chili and barbecue flavors. Focus is on a proper chili flavor profile • Meat: Any type of meat or combination of meats is allowed, such as beef, pork, chicken, or turkey. The use of ground, cut, shredded, or cubed meat is typically at the cook's discretion. • Spices: Commercial chili powder is permitted but pre-made chili mixes are not. Cooks may use their own spice blends • Beans and fillers: Beans are optional in competition-style chili. No fillers such as rice or pasta • Garnishes: Garnishes are not allowed on the chili for judging • Please have tasters first sample your chili before adding garnishes. An ingredient is considered a garnish if it is only on the top layer and not mixed throughout the bowl Judging is "blind," meaning the chili samples are marked with a number instead of a name to ensure impartiality.​
